Makes 10 | Prep time 20 mins | Cooking time 30 mins
Ingredients
50ml corn oil
1 tsp cumin seeds
1 small onion, finely chopped
1 small piece ginger, finely chopped
1/2 tsp turmeric powder
Chopped green chillies, as desired
1/2 head of broccoli, chopped
250g paneer, chopped
Handful of coriander leaves, finely chopped
1/2 tsp garam masala
10 ready-made puff pastry sheets, frozen
Method
1. Preheat the oven to 180˚C.
2. Heat the oil in a pan over medium heat. Add the cumin and wait for it to sizzle.
3. Add the onion and ginger. Sauté for 2 minutes.
4. Add turmeric powder and chillies. Stir for another minute.
5. Add the broccoli and cook for 2-3 minutes.
6. Add the paneer, coriander, salt and garam masala. Mix well. Remove from the heat and set aside to cool.
7. Meanwhile, remove the puff pastry from the freezer and keep in a cool place for 3-4 minutes.
8. Spread one sheet on the counter. Cut a square piece of about 4 inches and place the cooled broccoli mix in the centre. Fold diagonally. Seal the edges by brushing with water and pinching with a fork.
9. Refrigerate for 10 minutes.
10. Prick the top of the pastry with a fork.
11. Bake for 12-15 minutes. Serve.
