Ingredients
Juice of two lemons
6 tsp vinegar
600g chicken breast
Olive oil for frying
4 cloves garlic, finely minced
8 tomatoes, finely chopped
6 tbsp tomato paste
1 small onion, finely chopped
Method
1. In a shallow bowl, combine the lemon juice and vinegar with a little salt and pepper. Add the chicken and marinate. Cover and place in the refrigerator for at least an hour and a half.
2. To make the sauce, heat a little olive oil and fry the onions until golden brown. Then add the garlic and fry until aromatic. Add the tomatoes and tomato paste and slowly reduce the heat until the mixture is thick.
3. Blitz the sauce in a food processor. Adjust the seasoning and add a drop of water in case a more liquid consistency is required.
4. Remove the chicken from the marinade and pat dry. Brush with olive oil and grill the chicken until thoroughly cooked.
5. Serve the chicken with home-made tomato sauce.
