Share your experiences at food@gulfnews.com Supreme Braised Beef Preparation time: 30 minutes Cooking time: 2 hours 30 minutes Serves: 2-3 Ingredients: 3 kgs of Australian Wagyu ribs 2 L of chicken stock 3 gms tangerine peel 2 gms cinnamon 2 gms star anise 2 gms bay leaves 10 gms fresh lemongrass 20 gms ginger Seasoning: 15 ml light soy sauce 10 ml oyster sauce 5 gms chicken powder 15 gms rock sugar Method: 1. Debone the beef ribs to clean up excess tissue and fat; then cut the ribs into pieces of about 90 grams each. 2. Heat the olive oil, add slices of ginger and lemongrass and gently sauté until they release fragrance, then add tangerine peel, cinnamon, star anise, and fry until the full body of the aroma is released. 3. Fry the beef until golden brown on each side; then add the chicken stock, followed by rock sugar, oyster sauce, light soy sauce, and chicken powder to taste. Wait for the broth to come to an almost rolling boil. 4. Then transfer the ingredients in the pot to a casserole, turn the heat to low, let simmer for 90 minutes.
