Watch — Cook with Gulf News Food: Mumbai Pav Bhaji

A spicy mix of vegetables, cooked in butter and served hot with toasted buns

Mumbai Pav Bhaji

Preparation time: 15 minutes

Cooking time: 25 minutes

Serves: 1

Ingredients:

2 medium-sized onions minced fine 

1 tomato minced

1 small green capsicum cut fine

1 boiled potato

100 gms garden peas 

2 tsp chilli paste (red chillies blanched and ground to a paste)

1 tsp cumin seeds

1 tsp garam masala powder (store bought is fine)

2 tsp pav bhaji masala, readily available at Indian stores

1 tsp coriander powder 

2 tsp ginger-garlic paste (equal measures) 

Fresh lemon juice

Method:

1. Cut onions, tomatoes and green capsicum.

2. Heat a pan or griddle, add all the above vegetables, along with a little water.  

3. As the vegetables soften, begin mashing the vegetables slightly.  

4. After 7 to 8 minutes, they should be well cooked. Make sure there is a little water in the pan at this point, by adding if necessary during the cooking. 

5. Once the chopped vegetables are cooked, add mashed potatoes and mix them well.

6. Next, add all the spices and mix well. Allow it to cook for a further 5 to 6 minutes. 

7. Once done, drizzle lemon juice to taste. 

8. Take the bread buns, slice them in half and toast on the same griddle using butter. 

9. Plate the vegetable mix, garnish with chopped onions, lemon and freshly cut coriander. Serve along with toasted buns.
