Looking for a quick snack that satisfies your sweet tooth and is healthy? Look no further than frozen yoghurt barks! This dessert is a frozen version of a yoghurt bowl or parfait that is more nutritious than traditional desserts and easy to prepare and customise.

The yoghurt provides a creamy, rich base for toppings like fruit, nuts, and sauces to shine. The freshness of the fruit and crunch of the granola perfectly complements the thick, creamy yoghurt. With so many options for customisation, you can always find a combination that suits your taste, making it a crowd-pleaser.

Frozen yoghurt bark recipe

This recipe is the most simple thing you will ever prepare. All you need to do is spread some yoghurt on a flat tray, top it with fruits, nuts or any toppings of your choice, and freeze it.

Use Greek yoghurt along with Stevia powder or honey, granola and add fresh strawberries to make yoghurt bark.

Line a baking tray with parchment paper. Mix yoghurt with stevia and vanilla extract, spread it evenly on the tray and top with sliced strawberries.

Freeze the tray for 3-4 hours until yoghurt is frozen. Lift using parchment paper and cut into pieces.

Ingredients

400 gms Greek yoghurt

25 gms Stevia powder or honey

50 gms fresh strawberries

50 gms blueberry granola (store-bought)

1 tsp vanilla extract (optional)

Method

Remove the leafy part of the strawberries and slice them evenly.

Line a baking tray with parchment paper and set it aside.

Take yoghurt in a bowl and add stevia powder and vanilla extract. Whisk it together until well combined.

Pour the yoghurt on the lined tray and spread it evenly to about 1/4 inch thickness.

Place the sliced strawberries on top of the yoghurt randomly. Sprinkle the granola in the remaining space.

Place the tray in the freezer for 3 to 4 hours or until the yoghurt sheet is completely frozen.

Once set, lift the frozen yoghurt from the tray using the parchment paper. Cut the frozen slab into pieces using a knife.

Serve immediately or store in an airtight container to serve later.

Tips

1. To make a more decadent yoghurt bark, use half yoghurt and half cream instead of all yoghurt.

2. Add any sweetener, such as honey or castor sugar. Just make sure to adjust the amount according to your sweetness preference.

3. To customise the flavour of the yoghurt base, you can add fruit purees or even cocoa powder.

4. You can replace the toppings with any berries, nuts, coconut shavings, or any other toppings of your choice.

5. To add flavour and texture, you can top the bark with a swirl of peanut butter, melted chocolate, or other nut butter.

6. Allow the bark to set completely before removing it from the freezer.
