Recipe for Goan King Fish fry

Every coastal state of India has an iteration of the King Fish fry. Whether you relish it in Goa, Kerala or Bengal, you can bet that it's always well-seasoned, crispy and served with a side of freshly sliced onions and a lemon wedge for a zesty finish

SERVES 2 pieces
Ingredients

    ½ kg King fish slices

    ½ tsp garlic powder

    2 tsp chilli powder

    1 tsp cumin powder

    2 tsp coriander powder

    ½ tsp turmeric powder

    A pinch orange colour

    1 tbsp vinegar

    Salt to taste

    Oil for frying

METHOD

1. Mix together all spices, add a little water to make a thick consistency.

2. Coat the fish with this paste and keep aside for 30 minutes.

3. In a non-stick frying pan, heat oil until smoking. Reduce heat and shallow fry fish turning once, until nicely browned. Serve with lemon.
