Healthy yet delicious pasta penne salad

You'll feel like you've just had a healthy meal, yet you are getting away with having pasta!

SERVES 4
Ingredients

    400 gms pasta tubes (penne)

    1 large red pepper

    3 sticks of celery

    1 red onion

    1 bunch of dill

    20 stoned black olives

    Dressing:

    3 tbsp mayonnaise

    2 tbsp French mustard

    2 tbsp white wine vinegar

    2 tbsp oil

    1 tbsp lemon juice

    Salt and black pepper

METHOD

1. Boil pasta in plenty of salted water according to instructions on packet. It should retain some elasticity, al dente.

2. Rinse off pasta with cold water and allow to drain. Mix mayonnaise, mustard and vinegar together. Beat pouring in oil in a thin stream to a thick sauce.

3. Adjust flavour with lemon juice and season with salt and pepper. Add pasta and mix.

4. Divide and seed the pepper and cut into small dice. Shred celery sticks and chop onion and dill. Slice olives. Mix vegetables into pasta. Allow salad to stand for a little before serving.
