Chicken Freekeh

Whole grain green wheat (freekeh) and chicken combine in this nutritious dish that's equally flavourful. Freekeh is made by harvesting wheat when it's still soft and green and followed by sun-drying and burning the chaff off. This process lends it a nutty, almost smokey flavour profile, which adds depth and richness to the chicken. It's a perfect fall-back meal for days when you can't decide what to cook

Ingredients

    200gm green wheat

    20gm onions, chopped

    1 tsp ghee

    100ml chicken stock

    10gm Arabian spices

    Salt and pepper to taste

    50gm peas

    50gm carrots, diced

    600gm chicken, cut into pieces

    50gm mixed nuts

METHOD

1. Soak the green wheat in warm water for 1 hour.

2. Fry the onions and wheat in ghee for 5 minutes to make the freekeh. Add the stock, spices, seasoning and vegetables and cook covered for 30 minutes.

3. Boil the chicken until cooked. Season with salt and pepper.

4. Plate the freekeh and top with the chicken. Garnish with the mixed nuts and serve.
