Recipe: Smoked Salmon Fettuccine

Food blogger based in Dubai shares a recipe he learnt when he was in high school

I first made the Smoked Salmon Fettuccine in high school and it was a hit with my family. Since then, I am always getting requests from them to make it again. The recipe is great for dinner parties and is a unique twist on the classic Fettuccine Alfredo.

 

Ingredients:

  • 1 pack smoked salmon
  • 1.5 cups heavy cream
  • 1 onion
  • 4 garlic cloves
  • 3 tbsp dill
  • 1 tbsp parsley
  • 500g of fettuccine
  • 3 tbsp olive oil
  • 3 tbsp butter
  • 1 cup grated parmesan cheese
  • 1 cup chicken stock
  • Salt and pepper

 

Method:

Step 1: Heat the olive oil and butter in a pot until melted.

Step 2: Dice the onions, garlic and add to the pot with salt and pepper.

Step 3: When onions and garlic are cooked down and translucent, add the cream and stir.

Step 4: Pour the chicken stock into the pot and mix well. Make sure the sauce is just simmering and not boiling over.

Step 5: Cut the smoked salmon into small squares and add half into the pot, while stirring.

Step 6: Add the parmesan in batches while stirring to combine.

Step 7: Cook the fettucine in boiling water as per the package’s instructions and combine with sauce.

Step 8: Turn the heat off, add the rest of the smoked salmon, dill, parsley and mix.
