1. In a frying pan heat canola oil and cook potatoes. Set aside on kitchen paper to drain excess oil.
2. In a separate frying pan heat olive oil and sauté onions, garlic, cayenne pepper, coriander powder and leaves. Add potatoes, sea salt and black pepper to taste.
3. Toss well and add lime juice. Garnish with fresh coriander leaves and serve with garlic sauce on the side.
