Ah, Fafda – the ultimate Gujarati snack. Made with gram flour, laced with carom seeds and garnished with black pepper, this snack is a superstar during special occasions like Diwali and Dusshera. Often enjoyed with green chutney and salty green chillies, this crispy delight is quite easy to make. So, here's a quick guide to making it at home.

Ingredients:

You will need carom seeds, asafoetida, gram flour (besan), oil, salt and baking soda

  1. 1½ cup gram flour
  2. Salt to taste
  3. 1 tsp baking soda
  4. 1½ tsp carom seeds
  5. 1 tsp asafoetida
  6. 2 tsp oil
  7. 1 cup water

Step 1: In a bowl of gram flour, add salt, baking soda, carom seeds, asafoetida and a little bit of oil. Knead the mix well into a thick dough.

...by adding water in equal parts.

Continue kneading the dough

till it becomes smooth

Step 2: Pull out a small portion of the dough and continue kneading it till it becomes soft.

Step 4: Pinch a smaller portion from the well-kneaded dough and place it on the edge of a wooden plank.

Step 5: Using the base of your wrist, press the dough slightly and slide it across the plank till the dough is pasted thinly against the plank.

And flatten it out by sliding the base of your palm across the wooden plank

Step 6: Once flattened well, use a knife to scrape it off from the surface of the wooden plank.

Step 7: Fry these thin strips of dough on a medium-to-high flame and allow it to rise well before scooping it out of the oil.

Deep fry it in hot oil till it turns golden brown

Step 8: Once evenly fried, scoop it out of the oil and set it aside on a tray.

Step 9: Once fried, sprinkle the Fafda with pepper before serving.

...and place it on a tray. Powder it with a little salt and pepper before serving.

Step 10: Serve and enjoy with green chillies, kadhi (gram flour gravy) and a cabbage-carrot side dish.
