Beat the heat with refreshing homemade ginger-lime cordial

Natural ingredients, no additives, boost immunity, aid digestion, and reduce inflammation



Preparation: 1 hour

Cooking time: 15 minutes

Serves: 70 to 80

 

Ingredients

25 Limes

100 gms Ginger

700 ml Water

1 kg Sugar

 

Method

Step 1:

Scrape off the outer skin of the ginger, wash it, and set aside.

Step 2:

Slice the ginger, grind it with lukewarm water, filter, and extract the juice. If needed, add more water and grind again to extract more juice.

Step 3:

Set aside the juice for about an hour to settle. Once the juice settles, a thick white sediment will form at the bottom.

Step 4:

Now, cut the lime and extract the juice.

Step 5:

Add sugar and water to a pan or vessel. Boil them over a medium flame to make a sugar syrup. Continue boiling until the syrup reaches a one-thread consistency. Then, turn off the flame.

Step 6:

Add the ginger juice to the sugar syrup without disturbing the white sediment at the bottom. Mix well.

Step 7:

Keep the sugar-syrup-ginger-juice mix aside to cool.

Step 8:

Finally, add filtered lime juice and stir well. Pour into bottles and keep refrigerated.

To prepare the drink, add 2 to 3 tablespoons of syrup in a glass. Add soda or cold water, stir well, and serve. Enjoy the refreshing taste of homemade ginger-lime cordial!
