Rajma or kidney beans curry

In this recipe, the popular North Indian curry is simmered and cooked up in a microwave

Ingredients

    500gm red kidney beans

    3 tbsp cooking oil

    1 medium onion, finely chopped

    1 tsp ginger, grated

    1 tsp garlic, minced

    1/2 can of tomato puree

    2 cups water chopped coriander leaves, for garnish

     

    Seasonings

    1 tsp red chilli powder

    1/2 tsp turmeric powder

    1/2 tsp garam masala

    Salt to taste

METHOD

1. Soak the beans overnight in a deep casserole and microwave at medium for 20 minutes or until tender. Set aside.

2. Place the oil, onion, ginger, garlic and tomato puree in a casserole, cover and microwave at high for 3 to 4 minutes until onion is tender; stir.

3. Pour the above mixture, the boiled beans, and all the seasonings into a deep casserole. Mix well and add the water. Cover and microwave at high for 15 minutes. Garnish with coriander leaves. Serve hot with boiled rice.
