Penne Arrabiata

In our books, pasta can do no wrong. This simple and easy-to-replicate recipe ensures you won't either. Fail-proof al dente penne pasta coated in a tangy tomato sauce and sprinkled generously with Parmesan cheese is rustled up in 15 minutes flat

Ingredients

    Olive oil, for sauteing

    2-3 cloves garlic, finely chopped

    1 medium onion, chopped

    1 green pepper, chopped

    400gm tomatoes, chopped

    450ml tomato juice

    1 tsp basil, chopped (plus a few leaves for garnishing)

    1 tsp oregano

    1 tsp red chilli flakes (plus extra for garnishing)

    Salt, to taste

    300gm penne pasta, cooked and drained

    4tbsp Parmesan cheese, grated

METHOD

1. Heat oil in a saucepan, add garlic, onion, green pepper and fry until onion turns golden.

2. Add tomatoes and cook for three minutes. Now add tomato juice, basil, oregano, chilli flakes and salt and cook for about 3 minutes. Add pasta and stir until well-coated by tomato mixture.

3. Serve pasta garnished with grated cheese, basil and chilli flakes.
