Colombian Cholado, an icy drink with fruit syrup and condensed milk

This beverage is a mix of a snow cone and fruit cocktail

Ingredients

    8 cups ice, crushed

    1 can sweetened condensed milk

    3 bananas, diced

    1 mango, diced

    2 passion fruits

    1 cup papaya, diced

    1 cup pineapple, diced

    4 tbsp strawberry jam (store bought, optional)

    1 green apple, sliced (for garnish)

    4 vanilla wafer cookies (for garnish)

     

    For the strawberry syrup:

    1 cup water

    1 cup sugar

    1/2 cup strawberries, chopped

     

    For the passion fruit syrup:

    1 cup water

    1 cup sugar

    1/2 cup passion fruit pulp (2 fruits)

METHOD

For the fruit syrups:

1. Place all the ingredients for each syrup in separate small saucepans. Bring the mixtures to a boil, lower the heat and simmer for 5 minutes.

2. Strain the fruit pulp using a fine sieve and you can keep the syrup in the refrigerator for up to 5 days.

To assemble:

1. Crush the ice cubes in a food processor or blender.

2. Into four plastic cups, drizzle about 1 tablespoon of sweetened condensed milk.

3. Fill half of each cup with crushed ice.

4. Pour two tablespoons of one of the fruit syrups over the ice.

5. Add a tablespoon of each cut fruit

1. Drizzle more sweetened condensed milk over the fruit.

2. Repeat with another layer of ice, fruit syrup, cut fruits, sweetened condensed milk.

3. If desired, add a tablespoon of strawberry jam.

4. Place a slice of green apple and a vanilla wafer cookie on top, in each cup just before serving.
