Chocolate Souffle

Light, bittersweet, and individually served, this airy dessert is great to impress any gathering

Ingredients

    580gm 70 per cent chocolate

    130gm butter

    15 egg whites

    130gm icing sugar

    30gm sour cream

    12 egg yolks

METHOD

1. Melt chocolate and butter together in a double boiler.

2. In a mixing bowl, whisk together egg white and sugar to make a meringue.

3. Mix sour cream and egg yolk in a separate bowl.

4. Now fold in all the ingredients together gently.

5. Place the mixture in 10 ramekins and bake in a preheated oven at 190°C for 11 minutes. Serve with ice cream.
