Chilli pineapple topping for ice cream

Spicy pineapple syrup that covers silky vanilla ice cream... a tropical topping makes this an ideal summer dessert

SERVES 6
Ingredients

    300gm pineapple cubes

    ½ cups water

    2-3 finger red chillies, minced

    300gm castor sugar

    6x2 scoops vanilla ice cream

    For the garnish: freshly sliced pineapple and strawberry.

METHOD

1. Put the water, the pineapple and chillies and sugar in a pot and bring to the boil stirring until all the sugar is dissolved.

2. Reduce the temperature and let it simmer to allow to cook down to a syrup (for 15 minutes). Place the ice cream in ice cream bowl and add 2 tablespoons of chilli pineapple syrup mixture.

3. Garnish with a bird's eye chilli on the top and fruits.
