Steamed fish in banana leaf

There's something about eating out of banana leaves that ups the flavour instantly

Ingredients

    2 white river fish

    100ml lemon juice

    150gm whole-grain mustard

    25gm chopped garlic

    2 banana leaves

    1/2 cup each, julienned carrots and leeks

METHOD

1. Clean the fish and gash pockets along the sides. Mix garlic, wholegrain mustard and lemon juice and marinate fish in it for at least 15-20 minutes.

2. Place fish in a banana leaf each, top each with carrots and leeks and fold over the edges to make a parcel.

3. Steam parcels for 8-10 minutes.
