1. Bring large pan of salted water to boil. Then tip trimmed brussel sprouts and once water is boiling, cook for 5 minutes, drain, run under the cold water until cold, and drain again.
2. Cut the bacon into small bite-sized pieces and cook gently in a frying pan for 10 minutes until crisp and golden.
3. Remove the fried bacon out of the pan, leaving the fat behind, add the chestnuts and fry over a high heat for 5 minutes until tinged. Then removed fried chestnuts out of the pan.
4. Add the brussel sprouts with chopped shallots to the pan with a splash of water then finish cooking over medium heat for 5 minutes, stir until just tender.
5. Add back the bacon and chestnuts, season generously with salt and pepper, add chopped parsley, mix well, and serve hot.
