Here's how to make Arayes at home

A mini meat calzone made with cooked khubz or pita bread, arayes comes from the Levant



PREP TIME 20 m

SERVES 4-6
Ingredients

    500 gms ground lamb

    250 ml/1 cup parsley, coarsely chopped

    1 large onion, chopped

    1 tsp salt

    1 tsp baharat spice mix

    50 gm (½  cup) pine nuts

    1 small tomato, chopped

    2 garlic cloves, crushed

    ¼ tsp cinnamon powder

    5 tsp lemon juice

    5 tsp olive oil

    4-6 khubz (Arabic bread)

METHOD

1. Preheat the grill or barbecue.

2. Clean and cut lamb meat into cubes. Run it through the meat grinder or process in your food processor to chop finely.

3. Add the rest of the ingredients except the bread in a mixing bowl and knead well.

4. Open up the khubz or pita breads and spread the meat mixture in a thin layer. Close, then smear with olive oil and cook on the preheated charcoal fire/ grill at medium heat until cooked.
