Tips to get the perfect grilled cheese sandwich

Ingredients

2 thick slices of sourdough bread 

20 gms butter

50 gms fig and pomegranate jam

10 gms red onion, thinly sliced

50 gms mozzarella cheese, grated

30 gms gruyere cheese, sliced

20 gms shropshire blue cheese, crumbled

50 gms brie cheese, sliced

50 gms mature cheddar, sliced

1 tbsp olive oil

Salt and pepper, to taste

A handful of spinach leaves

Method

1. After slicing your sourdough bread, spread butter on all sides – four in total. Then season with salt and pepper on all four sides.

2. Take a slice of bread, spread jam followed by brie, gruyere, onion and place spinach leaves.

3. Now, carefully layer the rest of the cheese.

4. Take the other piece of bread and spread a bit more jam before placing it on top of the layered bread. Press down slightly to squash the sandwich.

5. Then, in a pan add a dash of olive oil over a medium flame.

6. Carefully add the toastie to the middle of the pan. Place a piece of parchment paper on top of the sandwich and then place a weight or another pan on top of this. Press down to squash the sandwich.

7. After three to four minutes, when the bread turns golden brown, flip it over and repeat the same on the other side.

Take it out, slice and enjoy!
