Ingredients
220 gms Wagyu beef tenderloin
Chinese bok choy, lightly sautéed and cut in half
50 gms sweet potato, sliced and roasted
60 gms carrot, diced and roasted
0.5 gms Brussel sprouts, roasted
30 gms new potato
Salt and black pepper to taste
1 tbsp corn oil
1 cherry tomato, cut in half (to garnish)
250 gms cauliflower, boiled
1 tbsp corn oil
2 tbsp heavy cream
Salt to taste
Method
Step 1: Season the beef tenderloin and grill to your liking. Keep it aside. We have a guide to grilling steak perfectly!
Step 2: For the cauliflower mash, boil it till soft, add to a blender with corn oil, cream and season with salt. Blend it at a high speed till the puree becomes smooth.
Step 3: Using a spatula, spread the puree on a plate, and arrange the roasted vegetables (as per picture).
Step 4: Garnish with fresh herbs and a few cherry tomatoes sliced in half.
Step 5: Place the grilled beef tenderloin on top.
Step 6: Serve and enjoy!
