Mughlai Mutton Shammi Kebabs

A royal favourite from the Mughal Era, made with minced mutton and spices

Ingredients

1 kg mutton, minced

200 gms split chickpea lentils (chana dal)

1 tsp ginger paste

1 tsp garlic paste

1 tsp cumin

6 cloves

6 black peppercorns

2 black cardamoms

1 cinnamon, small-stick

1 bay leaf

1 tsp coriander leaves, chopped

1 onion, chopped

2 green chillies

½ tsp yellow chilli powder

200 ml oil

Salt to taste

Method

1. To a large bowl, combine the spices and minced mutton. Boil in water.

2. Once the meat is cooked and tender, grind to a fine paste using a food processor.

3. Add chopped coriander leaves and chopped onions and small patties or shammi.

4. Shallow fry the patties until golden brown.

5. Serve hot and enjoy!
