Ingredients
4 to 6 jalapenos, de-seeded
½ cup cream cheese
4 slices of beef bacon, cooked
2 slices of Halloumi cheese
2 slices of cheddar cheese
2 slices bread
Cilantro, chopped (optional)
Butter, to toast
Method
1. First, preheat your oven to 170C. Next, fill each jalapeno with a tablespoon of cream cheese. Bake the stuffed jalapenos on a tray lined with parchment paper for 25 to 30 minutes. Remove from oven.
2. Place a slice of cheddar cheese on two bread slices. Place a slice of halloumi cheese over it and slice the cream cheese jalapenos into bite-size pieces. Divide the jalapeno slices between the two slices of bread with cheddar. Next, add four slices of beef bacon to the slice of bread with Halloumi cheese. If you want, you can add chopped cilantro on one of the bread slices. Combine the slices of bread to form a sandwich.
3. Brush the surface of each bread slice with butter (room temperature). Place it on a skillet over a medium flame, with the butter side down. Brush more butter over it and grill each side until light brown in colour.
4. The cheese should melt and the texture gooey. Once done, slice the bread into half and serve hot.
