Recipe: Hummus Al Marjan

Easy-to-make Arabic staple dish with a twist

INGREDIENTS

Chickpeas
Salt
Lemon salt
Tahini oil
Ice cubes
Carbonate soda
Garlic
Tomato paste
Chilli paste (optional)
Saffron (optional)
Corn oil

PREPARATION

Soak the chickpeas in water overnight, and then wash well.

Boil the chickpeas in water and add soda. Cook until tender and then wash in cold water.

Place in a blender and add ice cubes. Blend until the mixture becomes smooth. Add tahini, lemon salt, salt, garlic and corn oil and blend some more.

Serve with olive oil and bread.

Note: To make hummus saffron, add saffron to the mix. For hummus chilli, add chilli paste
