1. Peel the lemon and chop them into pieces.

2. Add lemon peels, nutmeg, cinnamon sticks, star anise, and black tea in a container. Let it steep for 30 minutes.

3. Strain and add the caster sugar, hot water, lime juice and pineapple juice to the container, and stir till the sugar dissolves.

4. Slowly pour the cold milk into the mixture.

5. Let the mixture sit in the fridge for 3 to 4 hours to let the milk curdle (do not stir).

6. Fill the highball glass with ice.

7. Fine strain the mixture through a coffee filter and pour it slowly over the ice cubes. Top off with soda water.

8. Garnish the drink with dried pineapple and serve chilled.
