Video guide to Thai-style steamed sea bass

A seafood recipe with the delicate flavour of Asian herbs

Ingredients

    Lime dressing:

    500 ml lime juice

    20 gms white sugar

    500 ml fish sauce

    Seabass:                                   

    8 fillets of seabass

    3 ½ cups lime dressing sauce

    20 gms garlic

    20 gms Thai red chilies

    150 gms white cabbage                      

    100 gms celery

    50 gms lemongrass

    4 to 5 sprigs of kaffir lime leaves

    2 tbsp lime juice

    Lime wedges for garnishing

    Coriander leaves for garnishing

METHOD

Making the lime dressing

1. Boil all the ingredients until the sugar dissolves.

2. Add the chopped garlic and Thai red chilies and then your dressing is ready.

Cooking the sea bass

2. Firstly, prepare the steamer by boiling the water.

3. Julienne the cabbage and slice the celery, and mix. On the bed of the cabbage and celery, place the sea bass fillets.

4. Add the lemongrass, kaffir lime leaves and lime juice on top of the fish.

5. Put the plate inside the steamer and steam for around 7 minutes, until the fish is completely cooked.

6. Once the sea bass is cooked, remove the herbs from the top and transfer the fish with the vegetables to a deep serving plate.

7. Pour the lime dressing on top of the seabass. Garnish the dish with sliced limes and coriander leaves.
