Video guide to make crispy Inas or Madakku san

It is a sweet tea stall snack popular in Kerala



Preparation time: 20 minutes

Cooking time: 20 minutes

Serves: 4

Ingredients

250 gms all-purpose flour or maida

¼ tsp salt

3 tbsp of ghee

½ tsp of turmeric powder (a pinch of food grade yellow colour)

4 tbsp of rice flour

100 gms of white sugar for making syrup

Oil for frying

Water

Method

Step: 1

Take flour in a deep bowl and add turmeric powder and salt. Combine well with a whisk.

Step: 2

Add one teaspoon of oil. Also add water little by little and knead to a smooth and soft dough. More the kneading, the better. Knead for at least five minutes. Cover and rest for 15 minutes (optional).

Step: 3

Sprinkle some flour on the rolling surface, knead the dough once again, and then split it into two halves.

Step: 4        

Place one part of the dough on the rolling surface and flatten it out using a rolling pin.

Step: 5

Spread the ghee evenly over the flattened dough with a spoon. Then spread the rice flour as a very thin layer over it.

Step: 6

Roll the flattened dough from one end to the other. Cut and remove both the edges and then cut it evenly at two-finger width.

Step: 7

Sprinkle some flour on the rolling surface and roll out each piece lengthwise. Do not press too hard while rolling out.

Step: 8

Heat oil in a pan. Once the oil is hot, reduce the heat to medium, drop the ‘spread folds’ in the oil, and fry it. Frying should be done over a low flame. Using a fork and skewer, spread the layers of the ‘spread folds’ to get a flowery shape. Fry till they turn golden brown and crispy.

Step: 9

Heat the sugar in a saucepan, add 1/4 cup of water, and allow to boil. Continue boiling till the syrup achieves one-thread consistency. Keep it aside for five minutes to cool a bit.

Step: 10

Finally, sprinkle the sugar syrup over the ‘Madakku san’. Instead of sprinkling, you can also dip the ‘folds’ in the sugar syrup if you like it sweeter.

The tasty and crispy Madakku san is ready to be relished.
