Video guide for Onam special Thoran or mixed vegetable stir fry

It's a classic vegan, coconut-based recipe



Preparation Time: 10 minutes

Cooking time: 10 minutes

Serves: 4

 

Ingredients

200 gms cabbage

100 gms carrot

100 gms beans

1 onion (chopped)

1 cup of grated coconut

½ tsp of turmeric powder

½ tsp ginger (julienned)

1 tbsp of coconut oil

2 green chillies

½ tsp mustard seeds

2 dried red chillies

1 ½ tsp black gram

Salt

Curry leaves

 

Method

Step: 1

Finely chop the vegetables and then set them aside.

Step 2

Next, roughly grind the grated coconut and green chillies with a pinch of turmeric powder, to make a coarse mixture. Set this mix aside.

Step: 3

Then, heat some cooking oil (preferably coconut oil) in a pan. Add mustard seeds and wait for them to start spluttering. Then, add black gram and dried red chillies, lower the flame and wait until it turns lightly golden.

Step: 4

Start by adding chopped onion and sauté it for a few seconds. Then, add the chopped beans, carrots, cabbage, ginger, and a pinch of salt to taste. Gently mix everything.

Step: 5

Cover and cook over medium to low flame for 2 to 3 minutes.

Step: 6

Then, open the lid and add the ground coconut mixture and a sprig of curry leaves.

Step: 7

Cover and cook over a low flame for 5 minutes until the vegetables are cooked.

Step: 8

After 5 minutes, open the lid and stir for a few seconds.

Your delicious mixed vegetable thoran is now ready. Enjoy it with some hot rice!
