Recipe: Here's how you can make flavoursome chicken kondattam at home

- 1 tbsp ginger garlic paste
- 1 tbsp lemon juice or vinegar
- Salt to taste
- 1 tbsp kashmiri chilli powder
- ¼ tsp turmeric powder
- 750 gms chicken
- 8 dry red chillies
- 20 shallots or 1 big onion
- 1 tsp ginger garlic paste
- 2 sprigs curry leaves
- 3 green chilli
- ¼ tsp turmeric powder
- 1 tsp kashmiri chilli powder
- ½ tsp coriander powder
- ½ tsp garam masala
- 4 tbsp tomato ketchup
- 1 ½ crushed chilli flakes
- Oil for frying
- Salt to taste
- ¼ cup to ½ cup hot water
Marinade:
Gravy:
1. Mix the chicken well in the marinade and keep in the fridge for a minimum of 20 minutes.
2. Heat oil in a pan and fry the chicken. Keep aside.
3. Using the same pan, fry dry red chilli and keep it aside.
4. Heat 3 to 4 tbsp of oil, sauté shallots, green chilli, curry leaves, salt and ginger garlic paste till it turns translucent.
5. Add turmeric, chilli powder, coriander powder and garam masal. Sauté well.
6. Add in the crushed chilli flakes and sauté till the raw smell goes.
7. Next, add tomato ketchup and mix well for another 5 minutes.
8. Add hot water and stir the mix, allow it to come to a boil and check the taste.
9. Add the fried chicken pieces and mix well.
10. Finally, garnish the dish with fried dried chilli and curry leaves.
