Pakistani-style Kurkuri Bhindi or crispy ladies' fingers

This recipe makes for a great vegetarian appetiser or even snack

SERVES 4
Ingredients

    1kg thinly sliced ladies' fingers

    100gm gram flour 

    Red chilli powder to taste

    Salt to taste

    2 tsp coriander powder

    A pinch of chaat masala

    0.5kg yogurt

    60ml milk

    Salt to taste

    Crushed red chilies to taste

    1/4 tsp minced garlic

METHOD

1. Whip yogurt with milk and spices and keep it aside.

2. Coat the ladies’ fingers with the dry mixture of spices and gram flour and deep fry till deep golden brown.

3. Add the ladies’ fingers on top of the mixture yogurt just before serving, to ensure they don’t go soggy quickly.

4. Sprinkle chaat masala as per your taste.
