Make New Zealand's Kiwi Passionfruit Pavlova with this recipe

Baked meringue with piped whipped cream and sliced fruits

Ingredients

    3 egg whites

    240 gms caster sugar

    1 tbsp cornflour

    1 tbsp white vinegar

    1 tsp vanilla essence

    ½ of 1 vanilla pod

METHOD

1. Preheat oven to 120C.

2. Whisk egg whites on full speed until they fluff up a little, then slowly add the sugar.

3. Keep mixing until the sugar dissolves.

4. In a separate small bowl, mix the cornflour, vinegar, vanilla essence, and vanilla beans.

5. Add to the egg white mixture and whip for an extra minute.

6. Pipe onto non-stick baking paper using a ring size of your choice and place in the oven for 45 minutes.

7. Turn oven temperature to 100C and bake for an additional 15 minutes.

8. To know if it is done, you should be able to hear a hollow sound when the bottom of the Pavlova is tapped.

9. Top with whipped cream and fruit of your choice (we highly recommend slicing sweet kiwi and mixing with passionfruit pulp, which can be found in supermarkets within the UAE).
