Make Egyptian Fatta for Coptic Xmas with this recipe

Often eaten as a festive dish, this dish is known for its subtle flavours

Ingredients

    2 cups rice

    3 tbsp butter

    2 onions (medium size - 1 whole and 1 chopped)

    1.5 kg meat (cut in big cubes)

    2 pieces Egyptian bread (if not available, it can be substituted by white Syrian bread)

    5 pieces cardamom

    3 pieces bay leaves

    Salt and pepper – as per taste

METHOD

1. In a medium size pot add water and bring to a boil. Add to this the meat, one onion, cardamon, bay leaf and let it boil for almost 30 minutes. Then add salt and pepper and continue boiling till meat becomes tender. Reserve the soup to be used later.

2. In another pot add one tablespoon butter and the chopped onion. Fry till it starts to become yellow. Add the rice and stir well for 5 to 7 minutes. Then add hot water till it covers the rice by almost 2-cm. Turn the flame to low and cover the pot tightly. This will take almost 30 minutes to cook.

3. Place the bread in an oven-proof plate and put it in the oven till it is roasted and hard.

4. In another pan put 2 tablespoons of butter and fry the meat.

5. To prepare the dish, in the bowl crack the bread to small pieces and add rice till the middle and upper half is filled. Then pour 1 to 1.5 cups of the soup to the bowl, so the bread gets softer.

6. Pour the butter after frying the meat on the top.

7. Serve fatta with fried or boiled meat.
