Homemade birista or fried onions recipe

Korma, pulao, curries or biryanis call for fried onions or birista. Try this recipe

SERVES Makes 1 cup of birista
Ingredients

    2 to 3 large raw onions, uniformly sliced 

    1 cup oil, to fry

    1/4 tsp of salt

METHOD

1. To make birista, you would need at least 2 to 3 large raw onions, sliced uniformly thin. Toss with some salt. Let it stand for 5 minutes, then pat them dry. Heat oil in a pan, till it is quite hot.

2. Drop the sliced onion in batches. It's almost like flash frying. Fry till golden - gives a sweet, caramel flavour. Remove, drain on paper towels. Can be stored in an air tight container in the fridge for a week or so.
