Emirati Chebab

The batter is risen using yeast and the pancakes are eaten with eggs, fruit, yoghurt, honey or date molasses

Ingredients

    400gm all-purpose flour

    600gm super fine flour

    4 tbsp sugar

    4 fresh eggs

    2 tsp dry yeast 

    2 tsp turmeric powder

    2 tsp ground green cardamom

    2 tsp fennel seeds

    A pinch saffron

    200gm milk powder

    450ml warm water

     

    To Finish

    1 tbsp cream cheese

    Date molasses or honey

    Strawberries

METHOD

1. Mix all the ingredients together in a food processor, or using a dough whisk and mixing bowl.

2. When the dough reaches pouring consistency, after about 15 minutes or so, cover and set aside to rest for 30 minutes to allow the yeast to improve.

3. Heat a pan to medium heat.

4. Add 3 tbsp of the chebab mixture in the hot pan to make a round pancake. Flip when the colour has turned golden and cook for a similar time on the other side.

5. To serve, place a pancake on a plate. Spread cream cheese on it. Drizzle a spoon of date molasses or honey over it. Garnish with strawberries.
