Bihari recipe for Litti Chokha

Made using brinjal, this dish is perfect for breakfast, lunch and dinner

Ingredients

    Ingredients for Chokha

    1 large brinjal

    2 large tomatoes

    1 medium onion, diced into small pieces

    2-3 garlic pods, dry roast on pan and mince into small pieces

    ½ inch ginger, diced into small pieces

    2-3 green chillies, diced into small pieces

    1 tbsp coriander leaves, cut fine

    1 tsp mustard oil

    Salt as per taste

    Ingredients for Litti

    2 cups wheat flour for the dough

    1 cup sattu (dry roasted gram flour) for stuffing

    2-3 pods garlic, dry roasted and diced

    2-3 green chillies, dry roasted and diced

    ½ Onion, diced (optional)

    1 tsp Carom seeds or ajwain)

    ½ tsp black salt

    ½ tsp lemon juice

    ½ tsp pickle oil (use oil from any pickle at home for a tangy flavour)

    1 tsp refined oil

    1 tbsp melted ghee

METHOD

1. Roast brinjal and tomatoes on a low flame. Once roasted, peel both the vegetables and mash it together.

2. Take diced onion, garlic, ginger and green chillies, coriander leaves, mustard oil and salt together in one bowl and mash it with the brinjal and tomato.

3. Now the Chokha is ready.

4. For the Litti, knead wheat flour with salt and water (in part - ¾ to 1 cup) to make a tight dough and keep aside.

5. Now mix sattu with roasted garlic, green chilies, onion (optional), ajwain, black salt, lemon juice and pickle oil to make a powdery mix.

6. Roll each dough ball to a circle (around 5 to 6 inches). Place 2 tablespoons of sattu stuffing in the centre. Then join the edges and then make a round shape for Litti.

7. Then roast the Littli on chulha or gas on low flame until you get the right consistency.

8. While serving break a part of Litti, smear some melted ghee on it and enjoy with the Chokha.
