A taste of Asia: Gulf News Food Show's Stir Fry Ramen
Preparation time: 20 minutes
Cooking time: 20 minutes
Serves: 1
Ingredients
100 gms Ramen noodles (store bought)
50 gms Beef
50 gms Capsicum (red, green and yellow )
5 gms Fried garlic
50 gms Button mushroom
50 gms Shimeji mushroom
50 gms White Onion
100 ml Sweet soy sauce
15 gms Roasted garlic
20 gms Brown sugar
60 ml Japanese soy sauce
10 gms Ancho chillies
10 gms Ginger
5 gms Sesame seeds
5 gms Green onion
15 ml Sesame oil
Method
Slice the white onion, capsicum, and mushroom. Thinly slice the beef and set it aside.
Next, roast the garlic until brown, in a pan, over medium flame or grill it for five minutes.
(Note: Infuse the ancho chilli in soy sauce and let it sit for a day before making the recipe.)
In the meantime, cook the ramen noodles for 3 minutes over a high flame. Drain and set aside.
Combine the soy-infused ancho chilli, brown sugar, sliced ginger, and roasted garlic in a bowl. Mix well until the brown sugar melts and blend it. Set aside.
In a pan, add oil and sauté chopped garlic and ginger over a medium flame.
Then add sliced onions, red, green, and yellow peppers, beef, and mushrooms. Cook until they are tender.
Add the cooked ramen noodles to the pan, pour the sauce over the noodles and beef, and stir everything together until well combined and heated. Once everything is cooked, remove the pan from the flame.
Serve the stir-fry ramen hot and garnish with chopped green onion, sesame seeds, and sesame oil.
Tips
You can substitute Yamasa soy sauce for Japanese soy sauce and use your preferred vegetables.
Crafting stir fry ramen with ancho chilli sauce is an art form that combines the rich umami flavours of tender noodles and vibrant vegetables with the smoky heat of ancho chillies to create a dish that is both comforting and full of exciting flavours.
