Cheddar cheese biscuits

Ingredients

120 gm (1 cup) plain flour

2 tbsp self-rising flour

½ tsp salt

¼ tsp cayenne

125gm butter

2 tbsp grated parmesan cheese

12 5gm Cheddar cheese

1 tbsp lemon juice

 

 

Method

1. Sift dry ingredients – flour, salt, cayenne – into a bowl. Rub in butter and grated cheeses, then mix to a soft dough with lemon juice.

2. Shape mixture into a long roll measuring 38 cm (15 inches), then double-wrap in greaseproof paper and aluminium foil. Refrigerate at least 3 hours.

3. Cut refrigerated roll into slices measuring 5mm ( ¼ inches) thick and place on greased oven trays.

4. Bake in moderate oven 15 minutes, until light golden brown. Cool on trays.
