Make a killer omelette

So, you were impressive last night. But what are you going to feed her this morning? Cereals and fruit are too cold and impersonal, they're certainly not going to do the trick when the sun starts to shine.

What you need is some light artillery. Something with firepower but not too tedious to make. The omelette is probably the easiest breakfast you can dish out - easy to make yet offering so much scope for creativity.

A secret ingredient here and there, and this could be a breakfast you will remember for... well, at least until lunch. So now it's time to don that apron you begrudgingly accepted as a gift from your mother and put it to good use.

Michele Mingozzi, executive sous chef, Fire&Ice Grill, Raffles Dubai, takes us through five simple steps to make the perfect omelette.

WHAT YOU'LL NEED:
Eggs (four for two portions), salt, pepper, chopped onions, mushrooms and tomatoes (wash these beforehand). Optional: Turkey ham, grated cheese, chopped green chilli.

Step 1: Beat the eggs until they start to foam. Add salt and pepper now, not when it's cooking. You can use either vegetable oil or olive oil, but chef Mingozzi recommends olive oil.

Step 2: Pour oil into a medium-hot preheated Teflon-coated pan. Add chopped onions, tomatoes and mushrooms. If your ingredients are raw (eg, onions, tomatoes) add them at the beginning. If they're processed (eg, turkey ham or cheese) add later. When onions start to change colour, pour beaten eggs in.

Step 3: Wait for the eggs to form a sheet. Once this starts to thicken, tilt the pan and gently gather the mixture towards one end, so that it forms a semi-circular sort of shape. The outer skin is now holding together the inner runny eggs. Run the spatula around the edges to ensure it doesn't stick to the pan.

Step 4: This is the tricky part. The perfect omelette is golden brown on the outside and fluffy and runny inside. Work the spatula underneath half of the omelette and gently fold it over.If you wish, add cheese, chilli or turkey ham before folding.

Step 5: Once it's folded, gently ease the omelette on to a plate. Serve with sauteéd sausages, mushrooms and celery.
