Kerala mutton ularthiyathu

Tender mutton cooked in a spicy masala with crunchy bites of fried coconut

SERVES 4-6
Ingredients

    1kg mutton cut into pieces

    2 ½ tsp chilli powder

    2 ½ tsp coriander powder

    ½ tsp turmeric powder

     ¼ tsp pepper

    1 pinch cumin seeds

    3 aniseeds

    2 one-inch long cinnamon pieces

    3 cloves

    1 cardamom

    ½ cup button onions sliced long

    Garlic flakes, as required 

    1 tsp ginger slices

    A few curry leaves

    ½ cup coconut slices

    1 dsp (dessert spoon) vinegar

    Salt

    ¼ cup oil

    1 tsp mustard

    5 tsp onion finely chopped

METHOD

1. Grind together chilli powder, coriander powder, turmeric powder, pepper, cumin seeds, aniseeds, cinnamon, cloves and cardamom.

2. Cook the meat with the ground masala, sliced button onions, garlic flakes, ginger slices, some curry leaves, coconut slices, vinegar and salt until it is tender.

3. Heat oil and splutter the mustard.

4. Fry chopped onion and some curry leaves. Stir in the meat with the gravy. When it boils remove from fire.
