Emirati Hobool or fried fish roe

These crunchy deep-fried fish roe dipped in a tarty and sour tomato sauce are an Emirati speciality

SERVES 3
Ingredients

    500gm of hobool (fish roe)

    1 lime

    1 tbsp of bzar spice mix (finely ground peppercorns, cumin, coriander, cloves, cardamom, chillis, cinnamon, and nutmeg, mixed with ginger and turmeric)

    1 tsp turmeric powder

    A pinch of salt

    1 cup frying oil

    For the Achaar Tomatoes

    1 piece of tomato

    ½  sprig coriander leaves, chopped

    1 clove of garlic

    1 piece of green chilli

    A pinch of salt

METHOD

For the Achaar Tomatoes

Blend all the ingredients together using a food processor or chop it finely by knife.

For the Hobool

1. Season hobool with lime, spices and salt.

2. In a pan heat the oil and fry the hobool until crispy and cooked thoroughly.

3. Drain well from oil.

4. Serve hobool with tomato dip and salad leaves of your choice on the side.
