1. Put the water, the pineapple and chillies and sugar in a pot and bring to the boil stirring until all the sugar is dissolved.

2. Reduce the temperature and let it simmer to allow to cook down to a syrup (for 15 minutes). Place the ice cream in ice cream bowl and add 2 tablespoons of chilli pineapple syrup mixture.

3. Garnish with a bird's eye chilli on the top and fruits.
