Method:
  • Chop bell peppers, mushrooms, courgettes and onion.
  • In a bowl, break eggs and whisk them.
  • Heat a cast iron pan, add a few drops of oil, add vegetables, salt and pepper to taste.
  • Then, pour the whisked egg onto it. Allow to cook for 3 to 5 minutes on medium heat.  
  • Halfway through, sprinkle cheddar cheese on top.
  • Then, safely hold the pan and place it in a preheated oven to get a golden brown colour. Let it cook for a further 6 to 7 minutes at 175C.
