Video: 3-step mango fudge recipe to satisfy your sweet cravings

The fruit fudge will be stickier than usual, so learn the trick to set it correctly

There is a good reason why mango is considered the king of fruits. Mango is synonymous with summer as one of the few joys of this season is biting into this juicy, tropical fruit. As the season is close to an end, I am sharing with you my favourite mango dessert that features this ultimate summer fruit in all its glory and truly celebrates it.

Mango milk fudge

Indulge in the delicious bite-sized treat of mango milk fudge that boasts a unique fruity flavour. Preparing it is effortless, and making it a great way to savour the taste of mangoes. The fudge is made by cooking a mixture of mangoes and milk until it thickens, resulting in a fudgy, gooey, decadent, and fruity confectionery that has everything one could ask for.

Preparation time - 10 minutes

Cooking time - 20 - 25 minutes

Setting time - 4 hours

2 large-sized mangoes or 1 cup of mango puree (store-bought)

80 gms sweetened condensed milk

50 gms milk powder

15 gms butter

Cashews for garnish (optional)

Method

Wash the mangoes thoroughly. Cut them into pieces and remove the flesh. Transfer them to a high-speed blender and blitz them into a smooth puree.

Pour the puree into a non-stick pan. Add the condensed milk and milk powder. Mix till all the ingredients are well combined.

Place the pan on low heat and cook the mixture while stirring for about 10 minutes.

At this point, add the butter. Stir and cook the mixture for another 10 to 15 minutes or until the mixture leaves the sides of the pan and is quite thick.

Transfer the mango fudge to a lined pan or serving cups of your choice and even it out using a spatula. Top it with some chopped cashews.

Let it come to room temperature, and then place it in the fridge for about 4 hours.

You can enjoy the fudge as it is, using a spoon, or divide it into equal parts and create bite-sized portions. However, the fudge will be delicate and sticky, so it's important to apply a small amount of vegetable oil to your hands before rolling it out. Once you've created the portions, place them in liners and serve.
