Here’s a another Ramadan recipe for spiced lamb kebabs from The Medley Restaurant, Pullman Dubai Creek City Centre. This seasoned meat, which is a blend of Middle Eastern and Chinese influences, is a must-try.

Preparation


Ingredients
2 lamb fillet
5 grams sweet paprika
100kg yoghurt
10 grams cumin powder
10 grams coriander powder
10 grams ginger
1 clove garlic
30 grams lemon slice
50 grams pepper
50 grams rock Salt

Method

1. Remove any skin/fat from the lamb fillets.
2. Cut lamb fillets into 3 to 4cm cubes.
3. Mix all ingredients together in medium-sized bowl .
4. Place in marinade and leave for six hours.
5. Put pieces of lamb on skewer and season with rock salt.
6. Place on hot grill and cook on all sides for three minutes.
7. Remove from grill and let rest for six minutes.
8. Serve and enjoy.
