Ramadan Recipe: Cocoa Burgers

Easy to make, and the cocoa powder adds a great hearty flavour and irresistible crust to the burger patty

Here is a new Ramadan special recipe, courtesy of Cocoa Kitchen. It’s for the cocoa burgers, which is an inspiring dish and dessert rolled into one.

Preparation

Ingredients
6oo grams clean well-trimmed Beef rump
500 grams clean well-trimmed Beef Brisket
30 grams Cocoa nibs
50 grams beef marrow
100 grams fresh beef fat purée
1 whole egg
50 grams dried bread crumbs

Method

1. Mix the cocoa nibs, egg and bread crumbs through the meat. 
2. Knead the mix until combined and let to rest over night or at least eight hours. 
3. Mould to the size of your patties and season with salt and pepper before grilling in low heat. 
4. Serve in grilled buns and add other condiments if you wish.
