Abu Dhabi: Chef Edward Kwon is the guest chef at Park Rotana during Gourmet Abu Dhabi, preparing a four-course meal of Korean classics made simple.
The former head chef of the Burj Al Arab in Dubai, who now runs two restaurants in South Korea, shares his philosophy of introducing his nation’s cuisine to those who may not be familiar with the likes of kimchi and galbi.
Q) Why are you involved with Gourmet Abu Dhabi?
The organisers were looking at what needs to be introduced to the Abu Dhabi food scene. The city is growing fast — compared to the last time I was here. It’s like a brand new city.
Q) What are you cooking?
Worldwide, people are crazy about Korean culture and I think Abu Dhabi can join in. I am Korean but I don’t do traditional. I think it’s important that someone who knows local tastes introduces Korean food here. My dishes respect the culture of the UAE.
Q) Tell us about one of the dishes you’re making?
Galbi jim is braised beef shortribs, which are marinated in soy overnight then cooked for 3 to 5 hours. You don’t need a knife to cut it. But the presentation is very modernised and straightforward. Otherwise with traditional Korean food, it needs to be explained.
