Guide to making Broccoli Shami Kebabs

A vegetarian version of a typically meat-based dish

Ingredients

175 gms broccoli florets blanched 

90 gms potato boiled and grated

90 gms spinach blanched and squeezed

2 gms green chili finely chopped

2 gms ginger finely chopped

1 tsp garam masala powder

1 tsp roasted cumin powder

15 gms cornflour 

30 gms roasted gram flour

5 gms salt 

2 gms chilli flakes 

1 gms black pepper crushed

50 gms mozzarella cheese 

Method

1. Mix the broccoli, spinach, potato, roasted cumin powder, ginger, green chili, cornflour, gram flour, salt, black pepper and chili flakes to a make a firm dough.

2. Portion the dough into balls of around 30 to 35 grams each and stuff with around five grams of mozzarella cheese.

3. Flatten each ball into mini patties.

4. Cook on a non-stick pan with a little oil, one side at a time. Sear until both the sides are golden brown. Serve with mint chutney and thinly cut carrots and beetroot.
