Ingredients
600 gms okra, fresh or frozen
200 gms lamb meat
3 tbsp butter
2 small onions, chopped
600 gms fresh tomatoes, seeded
Salt and pepper to taste
1 garlic clove, crushed
1 bunch fresh coriander
A pinch of ground coriander
125 ml or ¼ cup fresh lemon juice
Method
1. Clean the okra and wash in cold water and then place in a colander or sieve and let drain to dry completely. Cut the meat into cubes. Heat a tablespoon of butter in a non-stick pan and add the onions.
2. Sauté until soft and golden. Add the chopped tomatoes with the meat. Stir and add little water, season with salt and pepper, and cook till the meat is tender and cooked.
3. Heat another tablespoon of butter in another non-stick pan and add the okra. Saute until soft and golden on a medium to hot pan, then add to the meat and let it cook with the meat for 10 minutes.
4. In the meantime, heat the remaining butter in the same pan and add the garlic and both corianders, sautéing them in the butter for 2 minutes. Then add this to the meat and let it simmer and cook together for 3 minutes.
5. Lastly, pour in the lemon juice. Stir carefully once or twice and let it simmer gently for 5 minutes. Serve.
