How to make chopped salad Shirazi

This simple, refreshing salad is a great late afternoon pick-me-up

Ingredients

8 seasonal cucumbers, finely chopped

4-5 tomatoes, finely chopped

2 medium-sized red onions, finely chopped

Half a green bell pepper, finely chopped

Shirazi dressing (see recipe)

6-10 black chopped olives, for garnish

1 lemon cut into half, for garnish

Shirazi dressing

1 tbsp extra virgin olive oil

1 tsp white pepper powder

Salt to taste

Method

1. To make the dressing, mix all ingredients together.

2. Clean and finely chop all the vegetables in 5mm cubes and mix them together.

3. Pour the dressing over the chopped ingredients and toss them gently to coat all the ingredients. Leave for 10 minutes to infuse the flavours before serving.

4. To serve, place the salad in a serving dish, and garnish it with the black olives and lemon.
